A friend gave Robin and me some pretty tasty muffins and I found out one of the ingredients was a few handfuls of kale. So now I also put kale in muffins. I put it in the blender with some of the liquid ingredients (half the milk, all the egg(s)), then pour it in. Then put the rest of the milk in the blender to kind of clean it out. (Then of course clean out the blender fully with soap and water.)

I can tell from the time I put in so much kale the the muffins turned dark green that I don't really like the flavor of kale in muffins. But I can still get away with a fair amount (for 12 muffins: four cups of fresh kale as measured by tossing it from a bag into the blender until it gets to the four-cup line; obviously this is mostly air--it's much less than four cups after the blender has been turned on). That much may still lead to greenish muffins (unlike the ones I got from my friend), but I'm not sure because I started adding cocoa.

I never have made muffins I've really liked without a mix, and I'm still tweaking things. So I'm not publishing a full recipe here. Just this little hint to make your muffins a little healthier.

No blending? You are brave. I recommend a blender (or food processor) next time. Or even just chopping it finely ahead of time!
