I did lots of cooking this weekend.
I made spaghetti, adding a finely shredded carrot and a finely shredded zucchini for extra nutrition. It was still just as delicious as usual. R. noted afterwards that I would get more nutrition by throwing them in at the end instead of frying them up with the (very low-fat) hamburger.
I tried two flavors of DeBole's spaghetti pasta: jerusalem artichoke and spinach. Both taste like regular spaghetti to me and cook easily. But the spinach, which also includes jerusalem artichoke, cooks more quickly and has more fiber and iron, so I'll be getting that in the future. And green spaghetti with red sauce would make a lovely Christmas dinner. No?
I also made a sort of fruit salad. I got strawberries and bananas and lime juice and threw in some sweet potatoes and then stirred it together with some yogurt. Healthy, but not that yummy at all. I don't want to eat it. So now I'm using it as a milkshake base (just add ice cream and milk and a spoonful of sugar). That's much yummier.
And I tried a new recipe for egg salad based on the recipe for "Mom's Traditional Deviled Eggs" in Help! My Apartment Has a Kitchen. Instead of my usual mix of a little more mayo than mustard, this recipe has four parts sour cream, two parts mayonnaise and one part mustard. (I get fat-free sour cream, so it seems better for eating than mayonnaise.) It turned out kind of boring, and I didn't use enough so I increased the ratio of mustard. It's fine but not quite as magical as egg salad usually tastes. I may try equal amounts of sour cream, mayonnaise and mustard next time.
And that should be enough food for the week, in addition to cereal, juice, and other staples, not to mention the donut I got. And the cheese puffs. And a dark chocolate candy bar.
