Chicken Surprise is Back!
Nov. 26th, 2006 06:24 pmYesterday R. found Campbell's Chunky Chicken Mushroom Chowder with a date of August 1, 2008 stamped on it. This flavor seemed to have been discontinued because it got more and more difficult to find and, until today, we haven't seen one with a date later than 2002.
This is very exciting because it is the perfect flavor for R.'s "Chicken Surprise" which is a quick and yummy meal. I feel like I've shared this recipe before, but I can't find it, so here it is.
Chicken Surprise
1 can Campbell's Chunky Chicken Mushroom Chowder
10-12 oz Minute Rice
Bring soup to a boil. Add rice and cover the pan. Reduce heat and cook on very low heat for 2 minutes for white rice, 5 minutes for brown. Then, without removing the lid, turn off heat, let sit 7 minutes for white rice, 5 minutes for brown.
Serves 2.

You can also saute some extras like garlic and extra chicken and add the soup to this before bringing it to a boil. You can also add about 3 ounces of broth before boiling for a thinner texture. You can mix in cheese at the end and add pepper. R. usually does all these things, but I like it best just plain (with added broth or water). You can add rice the same way to other soups, but this is R.'s favorite.

We tried the base recipe today to see if the new soup really is the same, and it really does taste the same. Deb-Bob says check it out!
