A while back, Alethiography requested recipes of things we like to make. She prefers things that are simple, healthy, and inexpensive. Finally I thought of the right contribution:

Eggs and Sausage

1 link of Morningstar Farms vegetarian sausage
1 egg
1 tsp milk
sharp cheese

Take the sausage link out of the freezer and microwave it for 30 seconds. Meanwhile, spray a small nonstick pan with a thin layer of oil.

Cut the sausage into tiny pieces with scissors and let the pieces fall into the pan. Put the pan on the stove over low heat. Meanwhile, break an egg and mix it with a little milk.

By now the pan will probably be making sizzling noises. Stir the sausage around and pour in the egg mixture. Part of the egg will cook instantly. Push that part away from the edges.

While the rest is cooking, pull out the cheese and give it about three passes against the cheese grater so the cheese lands on the plate. Stir the eggs so they finish cooking. Then set them on top of the cheese so you get some cheese on every bite.

Pour a small glass of juice and now you have a nice snack or small meal. Which is really all you need after eating continuously throughout the workday. But the recipe is also easily doubled. And if you've made a huge batch of biscuits the previous weekend, they go well with this.

I use the vegetarian sausage even though it's not quite as yummy as meat sausage because I'm getting to where I feel that most meat sausage is just too greasy to be yummy and because just look at the nutrition facts. I use Morningstar Farms because it is by far the yummiest vegetarian sausage I have tasted.

My Mom prefers to mix water rather than milk with the egg because that makes the egg fluffier. I don't notice this and like any excuse to get a little more calcium in.

You don't really need to stand over the eggs stirring them continuously like some people think. If you like them to be a little golden brown, it's easier with less stirring. And if you don't want any chance of runniness at all, that's still quite easy; flipping and chopping (the egg) will do the trick.

You could sprinkle the cheese on top, but that uses an extra dish or takes extra time. (As it would have said on an old web site I used to love but that is gone now: if you are serving this to the queen, then go ahead and put the cheese on top.) You could mix the cheese in with everything in the pan, but then it's harder to taste such a small quantity.

And the glass of juice is small because there are an awful lot of calories in juice and also an awful lot of vitamin C, so I decided I really only need a small glass.

P.S. Morningstar Farms also makes good corndogs. Heat them in the toaster oven; dip them in way too much mustard. Yum.
